Benoit and Valerie Lahaye make quite exceptional Champagne from 4.8 hectares of superb vineyards in Bouzy and Ambonnay.  They adopted biodynamic viticulture in the late 2000s and the quality has just kept climbing, now being one of the most sought after growers.  This Brut Nature is stunning, pale lemon in colour with an expressive nose of stone fruit, candied peel, almonds and some slightly oxidative notes.  Very fine in the mouth with a real depth of flavour, rich but fresh and balanced.  Apricot, apple, cranberry, almonds, grapefruit, pastry, minerals and savoury notes, really pure and very long and there's a lot going on in the glass as it develops.  Really well priced for the quality and we don't get much of it, so grab it while you can.
