Peggy Buronfosse started her vineyard in 2001 with just 0.4 hectares of Varron Chardonnay. Her husband joined her full time in 2013 and they now farm 4.4 hectares and are certified organic, adopting some biodynamic principles. Their Varron Savagnin is wonderful. Crisp and minerally, it has so much going on it's difficult to know where to start. There are hints of pear, stone fruit and citrus, along with a subtle nuttiness and hints of vanilla. The minerals shine through on the palate, then you get notes of honey on the finish and a saline twang. As it opens in the glass, other aromas and flavours reveal themselves - clementine, seaweed, toast, spice, dried fruit - it's incredibly complex with great balance and length. Truly a lovely wine from one of the top producers in the Jura.
