Jose Luis Mateo is one of the most loved and respected growers in the whole of Spain and his attention to detail in his old vineyards is legendary. He works with indigenous varieties, some nearly forgotten, and places great emphasis on matching the right variety with the right soil. He also experiments a lot with small batches and this brilliant wine is the result of one such experiment. It's 100% Treixadura aged for 12 months under flor (Bajo Velo means under veil) giving the wine a subtle oxidative nutty twang. The flor was quite a light layer, controlled by moving the wine from wooden foudre to stainless steel vat after a few months, meaning less oxygen. 2300 bottles were filled and bottle aged for a further four years before release and, whilst stunning now, this is built to last for another 15 years. It's got so much going on - baked apple, spice, apricot, grapefruit, herbs, minerals, bright acidity, texture, length, complexity. If you want something a bit different, look no further.
