Aubert & Mathieu are a relatively new producer making some really lovely, very well priced organic wines from the Languedoc. Suzy is the name of their organic Chardonnay and it's another cracker. It's almost Chablis like, with crisp, bright citrus fruit, good acidity and an oyster shell mineral edge, and the impressive thing is the balance, freshness and length of their wines given the Languedoc can get very hot. The winemaking is really impressive across the board and I can see why these are on trade favourites. I think they're still a bit under the radar in the off trade so fill your boots before the secret is out.
