What's not to like about Vin Santo, especially when it's made by a top class winemaker like Paolo De Marchi? Traditionally produced from Trebbiano and Malvasia (originally the result of removing these varieties from his Chianti), the grapes are dried for three to five months before pressing and racking into small barrels (caratelli) where the wine ferments and ages for 8 years before bottling. At the end of the process, the resulting yield is 12-15% of the original grape weight. Light golden in colour, the nose is an intense array of dried citrus peel, apricots and honey, giving way to a luscious palate with incredibly concentrated flavours of honey, dried apricot, orange peel and vanilla. The delicious fresh finish keeps the wine unctuous without being cloying, and it's a truly sensational wine.
