Whilst Guillaume Sergent may not be as well known yet as some of his peers, he's on his way to being the one of the next superstar growers. His family have been gorwing vines around Vrigny since the mid 19th century and Guillaume farms 1.5 hectares of vines, all organically (soon to be certified). Adopting some biodynamic principles, his two Champagnes are made with minimal intervention, letting the terroir fully express itself. Les Pres Dieu is produced from two parcels - Les Pres and Les Vignes Dieu - and is a beautiful expression of Chardonnay. Very elegant with notes of green apple, grapefruit, brioche, wet stones and blossom, crisp and lengthy, don't serve too cold.
