One of Australia's greatest sweet wines, made by the brilliant Stephanie Toole, the process to make this wine requires a great deal of skill and experience. Essentially the vine canes are cut once the grapes are ripe, allowing the remaining fruit to concentrate and raisin naturally on the vine. This results in an intense flavour and richness with ripe, juicy citrus fruits, mandarin and kumquat, spice and vibrant acidity.
