Cesar Marquez is a young winemaker with deep family roots in the Bierzo region. He started his business in 2015 and he works old vineyards in the region (some of the vines are over 100 years old), all the while exploring the possibility of a Burgundy like classification for his wines. Each wine shows real vineyard character, each subtly different, and this is the sort of winemaking that we love, wines made with absolute passion and conviction. La Salvacion is produced from 100 year old Godello vines and I'd describe it as a serious, grown up wine rather than a simple quaffer. It is fermented with natural yeasts in 500 litre oak barrels and then left to mature for a year. During this time, the barrels are not topped up leading to a flor forming on the surface, which means the wine has hints of oxidation and a saltiness alongside the initial apple, pear and melon notes. I say this to highlight the style as it's not what I was expecting when I first opened the bottle. Textural and creamy as well on the palate with good acidity and mineral undertones then a decent length of finish. There's lots going on and it is quality but perhaps more of a thinking mans wine than a drinking mans wines, if that makes sense.
