From one of the Loire's rising superstars......
We've been searching for a top Pouilly Fume for a little while so when we heard Jonathan Pabiot mentioned as a potential successor to Dagueneau, our interest was naturally piqued. Jonathan is a quality focused producer making a small range of biodynamic wines in Pouilly-sur-Loire. His Elisa is a barrel aged Sauvignon made from younger vines on his 2.5 hectare estate. And it's outstanding showing a lovely nose of peach, citrus, elderflower and hints of butter. The palate is fresh and the wine has an underlying depth and complexity of flavour that all great wines do. Here you'll find subtle hints of stone fruit, lemon, apple, honey, wild flowers, gun flint, butter and cream. The balance and length of flavour is really impressive and this is, indeed, a top wine.
